Comfort Food

On the way home from work this evening, I had the oddest craving for stoemp. I only ever had that dish once, in a cafe in Brussels...funnily enough, it was a year ago yesterday when Andrea and I were there for the DaVinci Expo. But obviously it was a memorable meal...I remember it being extremely comforting.

I thought about making a trashy variation of it here at home. I don't have bacon, but I have bratwurst, which I could've cooked and diced. I have a box of Hungry Jack mashed potato flakes. I have eggs.

(Stoemp, if you're not interested in clicking the link, is essentially a Dutch/Belgian dish consisting of mashed potatoes/root veggies mixed with bacon with a fried egg on top...absolutely delicious, especially once the creamy yolk runs through it, creating a sauce).

Instead, I made scrambled eggs (with Velveeta) and biscuits with jam. That's my usual comfort food aside from macaroni and cheese or soup.

It's cold and rainy and generally miserable outside. Sadly though, my dinner wasn't very filling.

Anyway, today is my Mom's birthday. DHL delivered her birthday package today, and she was very pleased with it. I'm so glad. I always seem to outdo myself every year with the gifts I send her.

Lance has to fly at 3:30 AM. So he's in bed now. He called me as I was just leaving work because he was just getting ready for bed. At 7pm Oklahoma time. Crazy.

Tonight, my only goal is to write up a review of Cassandra and Jane. I finished it last night. I loved it...it was so enchanting. Even though it is a fictional account of Jane Austen's life, it seemed so very realistic to me. Jane's character in the novel was how I always imagined her to be.
