Ham, ham everywhere

Most of it is in the freezer, divided up into manageable portions. Each portion is at least 2 meals for the both of us. And then I have the ham bone (with a bunch of meat still attached to that) and a large chunk of the ham that wasn't pre-sliced. I'm saving those for a soup...probably ham & potato. Just need to find a good recipe for that, preferably one for the slow cooker.
This first portion of leftover ham is now almost used up. I made ham pizza last night. I just made Velveeta Shells & Cheese for lunch and added a generous portion of diced up ham and peas, a heaping tablespoon of sour cream (also something I need to use up) and a little bit of milk to thin out the cheese sauce a bit. There is now a small amount of ham left that I'll try to use up tomorrow. Maybe I'll pack it in my lunch with crackers and cheese.
So...that little tangent didn't really have a point. I just think lunch was good. Oh, and the Christmas cookies are almost gone, which I'm also happy about. Lance just finished up what was left of the frosted sugar cookies and we have the gingerbread left (which taste more like a spice cookie than gingerbread).
It's about 40 degrees. The sun actually came out for a minute or two. And it's not currently raining, so it would be a good time to get Reece out for some exercise. Poor dear has been housebound for most of the last 2 weeks since we've had all this bad weather. Lance got her out for a walk once, with risk to his life and limbs. But I think we can safely navigate the sidewalks now. Reece is going a bit stir-crazy and badly needs to get out.
I finished up my online course about an hour ago. I got 100% on my final exam. I'm thinking that I won't do one of those courses again. In some ways, it was useful because I got to learn more about what MS Word can do (even though I'm currently on Linux, so it doesn't help me at this moment). But overall, I don't feel like the course was any great benefit to me or that it will give me some sort of advantage toward expanding my writing skills in the future.
