Dec. 2nd, 2009 04:43 pmI just put a cheesy chicken and rice casserole in the oven - the recipe that appears on the label of Campbell's cream of chicken soup. I've never made it before, so I hope it doesn't turn out too watery. I didn't have the cheddar cheese to put on top of it. I just have a bag of Mexican 4 cheese blend and a bag of Italian 4 cheese blend so I'll have to combine the two and hope for the best. I'm sure the flavor is more subtle than cheddar. But the recipe wasn't otherwise tweaked (except for adding a bit of sage and subbing chicken broth for the water). I just wanted to use what I have and not worry about having to go out for additional ingredients.
We just finished off a lot of the leftovers from Thanksgiving and the weekend. We still have a little turkey left from Sunday night's dinner (why did I think it was a good idea to cook more turkey? I was in the mood for Thanksgiving, part 2, but not in the mood for leftovers) and a little Stovetop stuffing and gravy. Hopefully I can finish those off tomorrow. Really don't want to, but I don't want it to go to waste either.
I'm really not even in the mood for chicken, but that's about all I have left in the freezer, except for hamburger patties. We haven't been grocery shopping in 2 1/2 weeks. We'll be going to the commissary on Saturday. I can stretch this chicken and rice out to 2 meals. And there's always spaghetti.
In other news, it's been really chilly today. But it was sunny and clear, so I took Reece out for a walk. I really bundled up first. But it wasn't so bad once I was bundled up. And it was so beautiful out.
Just to give you an idea of how clear it was today (in December! Unprecedented!), here's a picture from Capitol Hill, posted by a guy who does sketches for the Seattle Times. I have a bit more freelancing to do today. I'm doing a rather tedious article on Java programming certificate and degree programs. There's a lot of information out there and the research is taking ages. I'll get through it. I also have a bit of editing/feedback to do on an academic essay as a favor for a friend. I should be able to knock that out tonight.
