Work was somewhat boring today, but it was so nice outside. I took a walk at lunch so I could soak up some sunshine. And I'm now the mistress of ceremonies on our team when it comes to potlucks and stuff, so I planned a potluck too. We're having it next Thursday and the theme will be appetizers and snacks, so I'll be bringing my cocktail meatballs. And Sigga signed up for deviled eggs and Datman signed up for baked brie. So already, it's going to be an awesome potluck, even with just 3 dishes.

After work, I got dinner ready. I made chicken using my old standby recipe - my favorite way to make chicken...seriously, soooooooooo good.

And while that was in the oven, I took Reece for a brisk walk. Lance prepared some Pasta-Roni fettuccine alfredo and then I heated up a can of peas when I got home. We ate dinner outside. It was so peaceful. Reece kept us entertained by grabbing her frisbee and throwing it around the backyard and then retrieving it. She's so funny.

Honestly, for a Monday, it hasn't been bad.

Next weekend, we're having Rich, Kathy and Beck over for Easter dinner. But I'm doing something a bit different. No ham, because we still have part of our Christmas Eve ham in the freezer. Nothing traditionally served for Easter. Instead, I'm making some pastitsio and some tzatziki. I'll get some pita bread. Kathy is bringing a Greek salad and some kind of lemon dessert. We're going to have a big Greek feast. I've had this recipe for pastitsio that I've been itching to make for the longest time. (It's a Greek macaroni casserole, kind of similar to a lasagna.) I'm really looking forward to it.
